Raspberry Muffins

Ingredients:

  • 2 cups oats
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp vanilla extract
  • 1/4 cup real maple syrup
  • 1/2-1 lemon, juiced
  • 2 eggs
  • 1 cup greek yogurt
  • 1 cup fresh or frozen raspberries

Instructions:

  1. Preheat oven to 400F
  2. Place all dry ingredients in food processor
  3. Place all wet ingredients, excepts raspberries in a bowl and whisk together
  4. Mix in dry ingredients
  5. Mix in Raspberries
  6. Place batter in muffin tins (we love to use silicone)
  7. Bake for 20-25 minutes, or until a toothpick/knife comes out clean
