Rice Paper Summer Rolls

Ingredients

  • 1/2 cup Red cabbage
  • 1/2 cup Romaine Lettuce
  • 1/2 cup Shredded Carrots
  • 1/2 cup Cucumber
  • 1/2 cup Red Onion
  • 1/4 cup Beets
  • 1 Avocado
  • 1/2 cup Bell Pepper (colour of your choice)
  • 2-4 rice paper wraps
     

Instructions

  1. Cut up desired amount of veggies depending on the amount of rice paper wraps you’ll be making. Exact amounts are not necessary.
  2. Thinly slice (matchsticks) all veggies.
  3. Place rice paper wrap in warm water for approximately 2 mins (follow instructions on package).
  4. Fill wrap with veggies and carefully wrap.
  5. Serve with peanut sauce and enjoy!

*These can be very messy and tricky the first few times you use them

TIP: Feel free to add cooked shrimp for additional protein.
