Ingredients
- 1/2 cup Red cabbage
- 1/2 cup Romaine Lettuce
- 1/2 cup Shredded Carrots
- 1/2 cup Cucumber
- 1/2 cup Red Onion
- 1/4 cup Beets
- 1 Avocado
- 1/2 cup Bell Pepper (colour of your choice)
- 2-4 rice paper wraps
Instructions
- Cut up desired amount of veggies depending on the amount of rice paper wraps you’ll be making. Exact amounts are not necessary.
- Thinly slice (matchsticks) all veggies.
- Place rice paper wrap in warm water for approximately 2 mins (follow instructions on package).
- Fill wrap with veggies and carefully wrap.
- Serve with peanut sauce and enjoy!
*These can be very messy and tricky the first few times you use them
TIP: Feel free to add cooked shrimp for additional protein.
