Ingredients:
- 1/3 cup cooked quinoa or brown rice
- 1/3 cup of cooked chicken
- 1 handful of chopped green beans or edamame
- 1 handful of bean sprouts
- 1 carrot, shredded
- 1 Tbsp fresh parlsey
- 1 green onion, chopped
Dressing:
- 1 clove of garlic
- 2 Tbsp sesame oil
- 3 Tbsp natural peanut butter
- 2 tsp fresh ginger
- 3 Tbsp fresh lime juice
- 2 Tbsp low-sodium tamari or soy sauce
Directions:
- Add all ingredients in a bowl. Quinoa, rice and chicken can be serve cold or warm.
- Add all ingredients for the dressing in a blender or food processor and mix until smooth.
- Add a portion of the dressing to the bowl and save the rest for another dish during the week.
- Top with sesame seeds if desired and enjoy!
