Thai-inspired Buddha Bowl

Ingredients:

  • 1/3 cup cooked quinoa or brown rice
  • 1/3 cup of cooked chicken
  • 1 handful of chopped green beans or edamame
  • 1 handful of bean sprouts
  • 1 carrot, shredded
  • 1 Tbsp fresh parlsey
  • 1 green onion, chopped

Dressing:

  • 1 clove of garlic
  • 2 Tbsp sesame oil
  • 3 Tbsp natural peanut butter
  • 2 tsp fresh ginger
  • 3 Tbsp fresh lime juice
  • 2 Tbsp low-sodium tamari or soy sauce

Directions:

  1. Add all ingredients in a bowl. Quinoa, rice and chicken can be serve cold or warm.
  2. Add all ingredients for the dressing in a blender or food processor and mix until smooth.
  3. Add a portion of the dressing to the bowl and save the rest for another dish during the week.
  4. Top with sesame seeds if desired and enjoy!
