Ingredients:
- 1 lb of ground chicken, turkey, beef or venison
- 1 Tbsp coconut oil or ghee
- 2 medium sweet potatoes/yams
- 1 large apple, peeled and diced
- 2 cups kale or spinach
- 2 Tbsp water or broth
- 1 tsp cinnamon
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp sage (optional)
- 1/2 tsp turmeric (optional)
- pinch of salt and pepper
Directions:
- Brown ground meat in a pan on medium heat. Mix in some salt and pepper then set aside.
- Peel sweet potatoes and dice into 1/2″ pieces.
- Melt coconut oil in a pan on medium-high heat and brown sweet potatoes for about 2 minutes.
- Sprinkle with salt and pepper. Lower the heat and cover the skilled. Cook for an additional 3-5 minutes, stirring midway.
- Peel and dice apple. Chop kale or spinach into small pieces. (If using kale, cut out the stem).
- Add apple, kale and water or broth to the pan. Along with the cinnamon, onion powder, garlic powder, sage and turmeric.
- Cover the pan for another 2-3 minutes, until everything is cooked (can easily poke with a fork).
- Add the browned meat, mix all together and let simmer for another minute.
- 1/4 of the skillet is 1 portion! The rest will keep well for a few days in the fridge!
