Egg-Free Morning Hash

Ingredients:

  • 1 lb of ground chicken, turkey, beef or venison
  • 1 Tbsp coconut oil or ghee
  • 2 medium sweet potatoes/yams
  • 1 large apple, peeled and diced
  • 2 cups kale or spinach
  • 2 Tbsp water or broth
  • 1 tsp cinnamon
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp sage (optional)
  • 1/2 tsp turmeric (optional)
  • pinch of salt and pepper
     

Directions:

  1. Brown ground meat in a pan on medium heat. Mix in some salt and  pepper then set aside.
  2. Peel sweet potatoes and dice into 1/2″ pieces.
  3. Melt coconut oil in a pan on medium-high heat and brown sweet potatoes for about 2 minutes.
  4. Sprinkle with salt and pepper. Lower the heat and cover the skilled. Cook for an additional 3-5 minutes, stirring midway.
  5. Peel and dice apple. Chop kale or spinach into small pieces. (If using kale, cut out the stem).
  6. Add apple, kale and water or broth to the pan. Along with the cinnamon, onion powder, garlic powder, sage and turmeric.
  7. Cover the pan for another 2-3 minutes, until everything is cooked (can easily poke with a fork).
  8. Add the browned meat, mix all together and let simmer for another minute.
  9. 1/4 of the skillet is 1 portion! The rest will keep well for a few days in the fridge!
