Sweet Potato Breakfast Hash


1 cup of sweet potatoes, cubed

1 cup mushrooms, sliced

½ cup onions, diced

1.5 cups of spinach, chopped

2 eggs

1 egg white


1. Melt 1 tsp of oil in a pan on medium/high heat and saute the sweet potatoes for approximately 10 minutes, stirring frequently.

2. Add the onions and mushrooms to the pan and saute for another 3-4 minutes.

3. Reduce the heat and stir in spinach until wilted.

4. Add in the eggs and stir frequently until done.

5. Enjoy! This recipe is for one portion.
