Strawberry Breakfast Bake
2 c unsweetened coconut flakes
¾ cup chopped walnuts or pecans
¼ cup chia seeds
1 tsp cinnamon
1 tsp baking soda
¼ tsp salt
1 cup unsweetened nut milk
1 mashed banana
2 tbsp melted coconut oil
2 cups diced fresh strawberries
Preheat oven to 375. Line 8x8 pan with parchment paper.
In a large bowl mix together dry ingredients.
In a smaller bowl whisk eggs and milk. Add banana and coconut oil. Combine wet ingredients into dry, fold in strawberries.
Bake for 40 min or until the top is firm and golden.
Serve warm or cold. You can add a small drizzle of pure maple syrup for added sweetness!
