1.5 cups almond flour
2 tsp cinnamon 1/4 tsp ground ginger 1/4 tsp ground cloves 1/4 tsp nutmeg 2 tbsp melted coconut oil 2 tbsp maple syrup 1 tsp vanilla 1/4 tsp salt FILLING 1/2 cup coconut sugar 1 cup pumpkin puree 3 large eggs 1tsp vanilla 1 tsp cinnamon 1/4 tsp ground ginger 1/4 tsp ground cloves 1/4 tsp nutmeg
DIRECTIONS 1. Preheat the oven to 350 degrees. Line 8x8 pan with parchment. 2. Mix all crust ingredients together and evenly press into the pan. Bake 350 for 10 min. 3. Make the filling by mixing pumpkin and coconut sugar, add eggs one at a time until well combined. Add the rest of the filling ingredients and mix well. 4. Remove crust from the oven, pour in the filling. Place back in the oven for 30 minutes. 5. Let bars cool for at least an hour. Remove from the pan and cut into 9 servings. *Optional* top with coconut, nuts or whip cream!
