Avocado Chocolate Cookies

Ingredients

  • 2 Avocado
  • 1 Banana
  • 3 TBSP Maple Syrup
  • 1 “Chia egg” (1 Tbsp chia seeds + 3Tbsp of water, set aside for 15-20 minutes)
  • ½ cup Peanut Butter
  • 1 tsp ground flax seed
  • 2 tsp vanilla extract
  • ½ cup Cacao powder
  • 2 TBSP Cacao nibs
  • Coconut flakes (optional)
     

Directions:

  1. Preheat oven to 350F.
  2. Mash avocado and banana.
  3. Add maple syrup and Peanut Butter.
  4. Mix in flax, vanilla, “chia egg”, coconut(if using) and cacao powder.
  5. Form into cookies and place on baking sheet with coconut oil or parchment paper.
  6. Bake for 10-15 minutes and enjoy!
