Roasted Curry Cauliflower


  • 1 large head cauliflower, chopped into florets
  • 1/2 onion, sliced
  • 4 cloves garlic, sliced
  • 2 Tbsp lemon juice
  • 2 Tbsp Extra virgin olive oil or avocado oil
  • 2 teaspoons curry powder
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper


  1. Preheat oven to 425F.
  2. Mix lemon juice, oil, garlic and spices in a bowl.
  3. Add in cauliflower and onions and toss until covered. If cauliflower is too dry add a bit more oil.
  4. Put the cauliflower and onion mixture on a baking sheet and roast for 20-30 minutes (until cooked).
  5. Enjoy!
