Ingredients:
- 2 c unsweetened coconut flakes
- ¾ cup chopped walnuts or pecans
- ¼ cup chia seeds
- 1 tsp cinnamon
- 1 tsp baking soda
- ¼ tsp salt
- 4 eggs
- 1 cup unsweetened nut milk
- 1 mashed banana
- 2 tbsp melted coconut oil
- 2 cups diced fresh strawberries
Directions:
- Preheat oven to 375. Line 8×8 pan with parchment paper.
- In a large bowl mix together dry ingredients.
- In a smaller bowl whisk eggs and milk. Add banana and coconut oil. Combine wet ingredients into dry, fold in strawberries.
- Bake for 40 min or until the top is firm and golden.
- Serve warm or cold. You can add a small drizzle of pure maple syrup for added sweetness!
